I'd recommend using a small spoon to scoop out the bone marrow from the bone. You can eat it plain or add it with any type of meat (or eggs). I really enjoy roasted bone marrow paired with steak, eggs, or chuck roast. It's hard to go wrong with bone marrow—it tastes good with just about everything.
How do I know when my bone marrow is done?
The amount of time needed to cook will depend on the size of the marrow bone and whether or not you're roasting it from frozen. When the marrow starts to turn a golden color, that's a good time to take it out. Personally I love a more "medium rare" bone marrow, where the marrow on the inside is still a bit pink and it's more solidified.
The longer you roast it, the more the fat will melt into liquid. Do some experimenting and you'll quickly figure out how you like it best!
Why does my marrow bone look different than the picture above?
Marrow bones comes in different shapes and sizes. The "canoe cut" is when they cut the bone horizontally. This type of marrow bone is easiest to eat the marrow out of. Other marrow bones might be round and short or round and long.
Can I eat bone marrow raw?
Personally I feel comfortable eating bone marrow raw if it comes from a trusted farm. I've done it on many occassions and enjoy the taste. Typically I prefer more of a "medium-rare" bone marrow where the marrow hasn't all melted into liquid fat but is roasted on the edges.
Where can I find bone marrow?
Many grocery stores will carry bone marrow. If you're looking for higher quality bone marrow from grass-finished cows, I'd recommend reaching out to your local farmer. Just ask for "marrow bones". Can I add spices or herbs to the bone marrow?
Of course! If you do well with spices and herbs, they taste great with bone marrow. I like
minced garlic, rosemary, and thyme added with it now that I'm no longer doing a strict carnivore diet.
Does bone marrow taste good mixed with butter? Or honey?
Yes, absolutely! You can whip up bone marrow and butter together (equal parts) and it will taste incredible. The whipped texture is really nice. If you tolerate honey, bone marrow tastes amazing with a bit of honey drizzed on top.
