Can I make this recipe without an ice cream maker?
Personally, I have never made it without an ice cream maker. We were able to find ours on FB marketplace for about $35 used and its been well worth the cost. I'm sure there is a way to do it without an ice cream maker, but I wouldn't recommend it (as the churning of the ice cream maker really makes a consistent texture that would be difficult to achieve by hand).
But if you want to try it without, I'm sure there are lots of great YouTube tutorials on it.
Should I remove the skin off the peaches before pureeing them?
You can either remove the skin before pureeing it, or you can puree it with the skin on and strain the liquid through (I did this and it worked great). If you do choose to strain it, just make sure you press the mixture to get as much of the puree through as you can. The texture of the ice cream won't be as smooth if you leave the skin in the puree.
Can I use low-carb sweeteners such as stevia or allulose?
You certainly can! I haven't done it myself, as I don't love the taste of low-carb sweeteners and prefer to use something like raw honey or maple syrup for a special treat. But it's certainly worth a try if it keeping things low carb is important to you!
Do I need to freeze it before eating?
We actually love eating it right after it's done churning, when it's a "soft serve" ice cream consistency. Because its made with straight heavy cream, it will be thicker than traditional ice cream recipes (where freezing after is necessary). If you'd like the ice cream to be more firm, freeze for 1-2 hours before eating!
How should I store it?
We recommend keeping your ice cream in a glass container in the freezer. It stores very well, but chances are, it won't last long because it tastes so good!
