Here's how to make the best carnivore diet mayonnaise with bacon fat! This recipe is great for those on the keto diet, paleo diet, low-carb diet, or any animal-based diet, etc (though it can be enjoyed by anyone).
Did you know that almost every store-bought brand of mayonnaise has seed oils in it? Even those that are marketed as "olive oil" mayo still typically have canola oil in it. These oils are very inflammatory and harmful to our health.
The good news is that it's really easy to make your own bacon mayonnaise. Getting the right consistency for your mayo may seem a bit overwhelming at first, but after your first few times making it, you'll definitely have the hang of it!
If you really don't want to make your own mayo, Primal Kitchen has an avocado oil mayo that is completely seed oil free (but those on the carnivore diet likely may want to avoid avocado oil). Here's the link to Primal Kitchen mayo.
Quick note: After refrigerated, this mayo will be a bit thicker consistency than store-bought mayo. But it still spreads great straight out of the fridge and works perfectly with any recipe that calls for mayonnaise.
Sometimes if you "over-mix" the egg yolks and bacon fat, it can turn to liquid. Obviously, you want to do everything you can to avoid this (by going slow with mixing in the bacon fat and stopping the blender once its reached the right consistency), but it is possible to save your mayo if this happens.
Here's what to do if your mayo is over-mixed: Bring an additional egg yolk to room temp in a glass jar. Add a dash of apple cider vinegar to it. Mix the new yolk and the ACV with your immersion blender. Then very slowly start pouring in your previous mixture to the new yolk while continuing to blend the ingredients—just like you did before. This actually works (I know because I over-mixed mine once and this trick saved my mayo).
Once your mayo is complete, store it in the fridge and enjoy for up to a month! You can use it in any recipe that calls for mayo, such as homemade ranch. All it will do is enhance the taste of whatever you're making. We actually made my husband some tomatillo ranch with the bacon mayo and everyone raved about it.
